Sabrina Chavez

Culinary Program Development / Sustainable Agriculture Practices / Regional
Sabrina was born in Peru and since she can remember has always been interested in the welfare and the potential of every individual. That is why Sabrina decided to study psychology. She is keen in observing the transformation of people who could heal and maximize their potential as human beings. Through vocation, fate or chance Sabrina started becoming more interested in culinary experiences as a cultural phenomenon and that is why Sabrina decided to enroll in a Masters program for Gastronomy and Tourism at the University of Gastronomic Sciences, founded by the Italian Slow Food Movement. She was attracted to the approach and focus the university takes when it comes to topics like the protection of small producers, the safeguard of biodiversity the world over and the conception of food as a vehicle that contains, transmits and carries the culture and history of each place.
During her stay in Italy, Sabrina focused and succeeded in refining her sense of taste and she started distinguishing ways to obtain, promote and protect quality food products that were representative of a particular culture or region. Sabrina returned to Lima and started her own import business of high-quality sustainable wines, olive oil and pastas form small, quality Italian producers thanks to intimate experiences and relationships she was able to forge with the local producers. Sabrina is also committed and highly motivated in promoting local products and sustainable producers from Peru. This is the primary reason why she co-founded The Gourmet (La Gastronoma), a lovely wine cellar where you can find loaves of bread made with Peruvian super grains, Peruvian organic coffee, premium Peruvian cacao, domestic artisanal cheeses, natural wines, Peruvian micro-breweries, Pisco and other products that encompass everything she loves about gastronomy.
Sabrina is also committed and highly motivated in promoting local products and sustainable producers from Peru.

Sabrina is one of the co- founders of the “Caracol” Slow Food Convivium established in Lima, Peru in 2013. Sabrina talents are instrumental in the development and implementation of culinary experiences in Italy and Peru for Mondo Verde Expeditions.

She is also involved in the developing of our Sustainable Farming Practices study programs for universities and NGO’s. Upon request Sabrina organized wine, Pisco and food tastings at The Gourmet (La Gastronoma) for Mondo Verde Expeditions clients.
